Learn how to build your own pizza oven – and experience an unforgettable time in Italy!
Immerse yourself in the world of pizza oven construction and learn from oven master Daniel Reisinger how to build your own high-quality oven at home. In this exclusive 3.5-day intensive workshop, you will build a CUPPO pizza oven (120 cm, segmented arch) together with other participants. This will remain in place after the workshop and serve as a model for your own oven construction at home.
What to expect?
Masterful know-how: Learn from Daniel Reisinger, one of the most renowned experts in oven construction with over 20 years of experience. Daniel is not only a master of his craft but also works internationally as a training instructor. He will share his extensive knowledge with you, which you can apply directly to your own oven construction at home.
Practical experience and craftsmanship: You will build the CUPPO pizza oven together with the other participants, learn the properties of fireclay and refractory concrete, and discover how to use these materials to create a robust and functional oven. You will also learn all about environmentally friendly combustion technology and optimal heat distribution, which are crucial for the efficiency of a wood-fired oven.
The highlight: At the end of the workshop, the oven will be heated up, and you can look forward to a homemade pizza – straight from the wood-fired oven you helped build.
The unique added value: This workshop will provide you with the practical knowledge and techniques to build your own pizza oven at home. You will learn how to build an oven with fireclay and refractory concrete and what to consider when selecting materials and planning.
A vacation in the background – relaxation included: In addition to the practical part of the workshop, you will have the opportunity to enjoy the picturesque landscape of Umbria. Spend five unforgettable days at Tenuta di Poggiolame and experience Italian hospitality surrounded by nature.
Workshop Schedule:
Preparation: An approximately one-hour online webinar beforehand will allow participants and the organizer to get to know each other. Any questions can be asked here.
In-Person Workshop: During the 3.5 intensive days on-site, you will build a CUPPO pizza oven under Daniel's guidance and gain valuable practical experience.
Half-day excursion: Relax with a trip to Città della Pieve or explore nature at the waterfalls in Castel di Fiori.
What you will gain: After this workshop, you will have the necessary knowledge and techniques to plan and build your own pizza oven at home. You will also gain valuable insights into the entire construction process, which you can apply to your future oven construction.

Fire is his element - harnessing this natural force, safely and environmentally friendly, for well-being, warmth, cooking, and baking is Daniel's passion.
Daniel is a passionate oven master and wood-fired oven enthusiast. With over 20 years of experience, he has not only perfected his craft but also shares his knowledge as a trainer and international consultant. He will show you how to harness fire and natural force safely and environmentally friendly to build a long-lasting wood-fired oven.

Scaleni is part of the historic building and sits on the upper floor facing north and east. It features an open fire place and an open beam ceiling. Two beds (a single bed and a 140cm futon bed) furnish the room. Scaleni is directly connected to Axis, of which the guests will have to pass through Scaleni to get to the shared bathroom.

Axis is a cute little double room (two single beds) facing east on the upper floor. It features open beams with terracotta tiles. It is connected to the front room (Scaleni), through which one will walk through to get to the hallway and to the bathroom, which is shared with Scaleni.

Mana double room looks out towards the pool. It is part of the Mana apartment which is a bit away from the other rooms. It shares a bathroom with Mana single.

Piriformis is a single room with its own bathroom. Piriformis has a north-facing private terrace, which is pleasantly cool in summer. Piriformis is close to the kitchen and is therefore best suited to guests who like to get up early or who don't mind kitchen noise.
